how do they even stack the sand?

From my knowledge of professional sand castle building (lol) I believe that they use a different kind of sand than the kind you find at the beach. It holds together more. I believe they also uses special tools.

Actually they use sand that contains silt.
They build it up with forms.
They add the silt sand and water together so it pacts tight it's almost like clay.
As for sculpting it they have tools.
