Stick with intel for a gaming PC. Their technologies and components are far superior for 3D applications.

I'm running an i7 3770k only OC'd to 4.1Ghz air-cooled with a GTX 670. Might want to look at going that route.
Just make sure to do your research with the PCI-E 3.0 cards and how they operate with your CPU. Last I checked, only ivy-bridge Intel CPUs like the i7 series were able to run PCI-E 3.0 Except for the newer i7 3930k, which is sandy bridge but can run PCI-E 3.0 -- but I doubt you want to pay ~$550 for the CPU
If you ran GTX 670 through a sandy bridge processor, it would run it with PCI-E 2.0 speeds, thus not using the full power of your video card. Ivy bridge processors run much hotter than the sandy bridge versions, but can pump out some serious power.
I also run a Samsung 840 Pro 256GB SSD. One of the best SSD's on the market. About $1.00 per GB of storage needed, which isn't bad for a solid state. Uses very little power, produces amazing read/write speeds, and generates very little heat.
The 800 watt PSU will be golden for your setup. I'm running a 750 watt PSU and have no issues with my non-SLI setup.
The air-cooled will be fine for your setup. Temps may be a bit higher than normal if you go with an i7 ivy-bridge, especially if you OC it a bit --
but still, by far, within a safe range. If you want to try out liquid-cooling, I would recommend the Corsair cases. Not that expensive and some have pre-built mounts for the Corsair H100 dual radiator/fan liquid-cooling units for your CPU.
These are all simple recommendations and by no way are they are guideline for how you have to build it. I've just felt more than satisfied from what my simplistic system is delivering.
