Don't watch bleach and if you have started watching bleach, stop watching bleach........ many people start off with it as an anime and don't realize that it's actually pretty bad because they have nothing else to compare it to, thus resulting in a nostalgic effect like with video games. You remember a video game being good when you first played it, but if you were to go back again after years of experience you would find its kind of meh compared to others. Not to mention bleach is really long which can result in feeling like watching it is a chore rather than enjoying it especially when you get to those 30+ episode side arcs that ruin the flow of the original show.

These would be much better jumping off shows for you to watch. The length is much shorter than 300 episodes to allow you to experience more anime, the genres are somewhat varied so you can get a feel for what you like, and these shows have little no references to other shows so you don't find yourself wondering whats going on because you haven't seen a certain show.

Ghost in the shell is confusing! I still till this day dont know whats going on. Bleach might be long but it can be entertaining and fun. Trigun, Death Note and Soul Eater are great from above. Death Note is a little more serious.
I can't believe, I'm about to say this but, Soul Eater. Cause it has every anime genre in it, comedy, action, a will developed story I can think the end was bad but, slice of life for it to be in that world. It might seem childish but, it wasn't meant for adults as much as for the kid from japan, it's a great example on how different their television is to America's.
Agree with the above posts except for Cowboy Bebop which is pretty bad imo. You can watch Sword Art Online which is about people trapped in an mmo and can't leave, it's actually pretty good. Also I recommend Hellsing if you are into action anime, Samurai Champloo if you are into good old sword fights. Kenichi is good if you are into martial arts, one of my all time favorite anime. Beelzebub is also good, uh there are too many to name just read the descriptions and see which ones you would prefer.
How could you say such things about Cowboy Bebop.
Uhhh Cowboy Bebop was a generation thing. If you watched it way back when then I guess you enjoyed it, kinda like I enjoyed Pokemon as a kid. I watched Cowboy Bebop about a year ago and with so much other anime to compare to, I just didn't like it's lack of story progression. If I go back and try to watch some of the old anime that I enjoyed so much as a kid, just can't do it. Don't get me wrong, there are still many old school anime that I still re-watch to this day, like Trigun or Gundam or Escaflowne but there are many that I just can't stand watching. CB is one of them.

You should watch Attack On Titan, Sword Art Online, Pupa (if you're into a creepy, scary, weird type of shows) and Knight in the Area if you like Soccer/football.
