Well, yeah...... It's been a while. Was on vacation, hope you'll forgive me. Btw, engie is in awesome class, you should try playing it again if you've gotten out of it 
Defense
You are ONLY a defensive class: WRONG. Engies can be EXTREMELY important in offense anywhere from teleporters to keep the team moving, mini sentries to keep the pressure on, or dispensers to keep your team supplied with ammo.
Mini Sentry
I would suggest this for offense or a defense which you will not have much time to build (AKA Pressure coming in, end of round, etc). Can be comboed well with weapons such as the widowmaker or the frontier justice. Wouldn't suggest using frontier justice with normal sentry, as the weapon is meant for your sentries being destroyed more often than not.
Wrench
Default is usually good. If you don't plan on taking out spies, I would say jag as it has the faster build rate. Southern hospitality is only good if you plan on actually catching some spies. Eureka Effect is pretty bad, as it is important to constantly move your sentry, dispenser, or teleporters (either forward or backward). Use it if you must, but I don't suggest it.
Shoot 'em!
Shotgun: Default. If you don't want any of the negatives of the others, or you don't know what you're doing, probably just use this.
Widowmaker: Good if you know you can go in with a surprise. Can deal immense damage and doesn't have to reload.
Pomson 6000: Pretty much just a weapon you use if you want to annoy people. Can be useful if theres an active uber you want to wear out, or if you just want to piss off spies.
Rescue Ranger: Awesome for moving stuff up. Good if you're coming back from respawn and need to fix your building, or just need to stay a bit back and help it stay alive. Usually best to be hitting it with your wrench for health if you can.
Secondary
Wranger: Use it if you need the range or you plan on rocket jumping.
Short Circuit: Possible to use if you're getting projectile spam, but it is a little difficult to use. Not 100% on this one.
Payload
While pushing, make sure your minisentry is always near where the payload is. This defends your team and keeps the pressure on!
For defense, it's basically the same as always. Make a level 3 sentry. Don't die.
Attack / Defend

Like payload, for pushing, you want to keep it near the point. In some attack / defense, you may want to use your sentry to hold some areas. One notable example is the side alley in Dustbowl round 2.
Control Point
Defense is not too normal as each team is just going for it. If the other team gets an uber or you're getting pushed back, or you're at the last point, you can build a normal sentry. Otherwise I suggest mini sentry.
Pushing, what you'll normally do, just requires your teleporters to get teammates ahead, and your minisentry to prevent any enemies from getting back, and to clear that point!
TL;DR: Attack = minisentry, defend = lvl3 and don't die. Use weapon that fits situation.
