Found myself trying to utilize shadowplay today in my NVIDIA GeForce Experience and after lots of tribulations I came across a thread informing me that my issue was due to it not being compatible with multiple monitors running sli. I was wondering/hoping someone would have a little insight as to any other recording software that is compatible with multiple monitors.

Any help out there?

Well thats unfortunate.

On that note, any tips as to which editing software is the best? Free or not, doesn't really matter. Completely new in this area.

I use Adobe. I've been having some issues with audio becoming out of sync from video captured with shadowplay, so maybe not idk.

Shadowplay mp4's should be run through handbrake to use in premiere because variable framerate is unsupported.

Dxtory, I believe is your alternate solution

I agree with Dxtory. Been using it for a long time. Uses very little resources as compared to Fraps.

I've edited with Adobe Premier and Sony Vegas, not really an preference over either one.

I use OBS to record my videos. It works pretty good depending on your settings.

I use CyberLink PowerDirector 13 to edit my videos. It works pretty good and is efficient.
