Afternoon eGO fam! I'm currently searching the interwebz on a hunt for a good game for my son and I to play together. Big issue is that he is 4, so games involving complex movements or required reading are out. To complicate things further the ability to play offline is a must. I've though got about Minecraft, but frankly I know very little about it. Any other parents play with the little ones?

Not a parent but I have played games with my father at a young age, you could do minecraft, and Im sure the Minecraft division would help you on the info about it, try some browser games like;
http://agar.io/- play as a cell and eat your way, as you eat other players or NPCs you grow and try to make it on to the games leaderboard
http://slither.io/-Similar to agario but your a snake insted of a ball

If you want, and if you have a console you can try the lego game series, its like COD for kids, but you never die, and you use map secrets to get items

Since its your son, I know as a parent you may not like him playing shooters but try Plants VS. Zombies Garden Warfare 1 and 2, they are cute shooters as a spinoff of the clasic PVZ game

If your son likes sports try the Fifa or NFL games, or maybe rocket league

One of the highly recomemded ones that I would give are the Comand And Conqour Series, or Civ 5, they are strategy games, but I played C&C and strategy games that were based on history, and the knolage still helps me to this day on battle plans and history at school, for example im in 8th grade (and a little dislexic, you can tell by my spelling) A strategy game I played was based on the Revolutinary war, and the strategy in the game helped me study with the different battles, like the one in Lexington and Concord.
