In parentheses is the difference between my red and green salsas... Everything else is the same. Here goes...
1/2 onion, chopped
10 Jalapenos (6 Habaneros), cut in 1/4ths *remove seeds... it will be plenty hot without
5 Tomatillos (10 Roma tomatoes), cut in 1/4ths
3 or 4 garlic cloves, peeled and sliced in half
2 Tbls salt
about 1 tsp Black pepper
1/2 cup chopped cilantro
Avocado, optional (for green, not red)
Lime juice, about 1 Tbls
Add onion, jalapenos (or habaneros), tomatillos (or roma tomatoes), and garlic to a pot, and just cover with water, and boil until soft.
Allow to cool after draining.
Throw in blender. Add cilantro, lime juice, salt and pepper, (avocado, if you are using one) and blend to desired consistency.
That's it! Both times I made it, it came out like a pro.
Its so very simple and you will be very pleased with yourself

P.S. Be sure to try some while it's still warm. I had never tried warm salsa before with chips, it was freaking amazing
