How do the eGO/ eG tags work?

After I've joined the forum, is there a steam group I have to join for the tag or do I just put it in my name?

Arbiter linked a really nice intro page for you, but basically the breakdown is;

=(e)= is the basic member tag you get for free when you apply
=(eG)= is essentially a trial admin, must be earned, this applies to all the following tags as well
=(eGO)= is an Admin

You then have Managers, Senior Managers, and Community Managers.

How does the MAUL application work? It justs asks for my name and a gamr I play, but CS:GO isn't an option, and it isn't an option on the member application either.

Hey ivan, So when setting up your maul profile and your application there isn't a CSGO option, for maul what you want to do is add your source ID(Your steam id) and choose the division counter strike: Source, On your application what you would do is set counter strike source as your division which then should give you another drop down under it to choose which game, once you can choose which game you should be able to select counter strike global offensive. Hopefully, this helps, if you still are having issues try and find someone from member services and ask them about it.
