If you're on PC, there's actually an "Easy Mode" mod in case you want to dial things down a little:

That said, it was my first proper Souls game but I've played and finished similar ones like Lords of the Fallen and Fallen Order (Star Wars). It definitely has tough moments but you can level your way. It's really good.
