It really varies for me. Every map has its subtleties, and the difference between an instant respawn vs timed respawn makes a big difference as well. My only experience with CTF is 2Fort, which I had even played back in QuakeI days (skipped a Calc I final to play when I was a stupid freshman in college). A long map time on a 2fort server really guts the feel of urgency that heightens the TF experience, and the presence of more than one good engineer on defense neuters the prospect of the game actually going anywhere.
CP/PL maps are a little better. The two map types are actually almost identical playwise in comparison to CTF, the difference being that there are only a few cap points on CP and effectively infinite "points" on payload. A quick time limit and a shifting battlefield really spice up the experience, and I almost exclusively play PL for that reason. The trade-off between these maps and CTF are that it's easiest to feel a team imbalance on a CP/PL map than CTF, since the spawns are comparatively hard to camp on a CTF.
