I wouldn't heavily reccomend picking up unarmed; some of the VATS finishing strikes are really brutal and awesome to watch.. But, really, you have 3 types of weapons to use, and though I love monks in most games, 50+ hours with only your fists gets pretty boring versus small/big guns, where you have about seven for each situation.
IF YOU DO go unarmed and don't mind using the same weapon for a long time, you can get the Deathclaw Gauntlet just north of the Dunwich building at the F. Scott Key campground, if you want to wrestle a full-HP deathclaw for it. If you don't, go to minefield first and loot about twenty frag mines, pile them up near the campground, and then draw the deathclaw right into the pile. Instant win, Deathclaw Gauntlet schematic is inside the trailer at the campground and you already have a deathclaw hand. If you just want a power fist, there's one sitting out in the open in the Paradise Falls common room in the left corner. It's in a bucket, easy to steal without anyone noticing.
If you want to do something really fun, go melee/big guns and make a pyro. The flamethrower is my favorite weapon to date, and I use the Burnmaster on every character I have at some point or another. The shiskebab is also the best melee weapon in the game (I think; Ripper might be better if you have maxed agility and can use it twice in VATS), and with pyromaniac you're able to do an excessive amount of damage with it. The Burnmaster, however, is NOT effected by the pyromaniac perk and is only useful to repair a basic flamethrower if you have the perk. But there is like 600 ammo stockpiled in the place you find it, it's worth the trip.
I've been going back and having fun with all the little things I missed in my last play-through. Namely, on my evil energy-gunner, I've collar'd and sold everyone in Megaton and Big Town. I hate those towns. (NOTE IF YOU TRY SLAVING: Ditch your companion somewhere, or else it's impossible. They will immediately attack anyone you shoot with the Mesmatron.)
