Definitely Death Note and Code Geass, they're some of the best written animes out there and don't have some cheesily feel-good plot. Really, really deep stuff, makes you think.

I highly recomend Claymore. really good anime.. action/drama gerne.
Another i recomend is Golden Boy. funny as hell! comedy/man humor
And one last one would probably be.. well i recommend you read the manga and not watch the anime.. Black Cat. god that was a decent anime lol

My favorites cover a wide spectrum of genres
Tengen Toppa Gurren Lagann - It's a bit nonsensical at times, but hey, most cartoons aren't. Anyways, though the plot and concept might be a little... contrived... it has a lot of well drawn action sequences and I guarantee that you'll be GAR for at least one of the main characters, haha.
Azumanga Daioh - Now this is hands down, one of the most hilarious anime I've ever watched. A slice-of-life comedy dealing with a group of high school girls, each of them having their own unique personalities that adds so much life to the show. I can't say anything else that would do Azumanga Daioh justice, so I just advise you to watch and enjoy.
Cowboy Bebop - One of the more serious shows on my list, Cowboy Bebop makes the cut as one of my favorites because of the beautiful/smooth animation, the memorable characters, and gripping fight sequences. Not to mention the kick-ass OP
Fullmetal Alchemist - Don't let the rabid fangirls draw you away from this anime, FMA has got to be one of the most well written shows I've seen. The plot is highly original, as are the characters, and the show itself is nonstop, by which I mean captivating episodes that consist of next to no fillers (The one filler that it has is still a good episode). What drew me to the show were the voice actors, who are AWESOME, the fight scenes, and the fact that it can shift so well from comedy to drama to action with the subtlety of a gorilla. Okay, probably not the best of metaphors...
Blaaa... that's all I can think of for now. Keep in mind, these are my FAVORITES, and by no way do they make up the entire list of anime that I like.

Haha, by fillers, do you mean that one episode where Mustang and Co. are off having a "mission" of "utmost importance"?
Because that was hilarious.
There is even people on moddb who are making a mod called neotokyo which is fully based on GITS.
Witchblade has been released with eng dubbs. I LOVE IT TO BITS
Initial D is the greatest racing tv show ever, drifting down a mountain and its an anime. If you love street racing than this is the one to grab.
Trigun is good
Escaflowne is amazing
Oh and if you like anime movies, anything by Hayao Miyazaki is excellent. Greatest Storyteller of All Time.

Shonen or more mature?
Fun ones that are completely pointless: Rosario to Vampire and Maburaho
I highly recommend City Hunter, if you like older animes (like Ranma 1/2) then this will hit the spot. And Angel Heart "continues" it in a different universe, so same characters but slightly different style/story.
Then there's Last Exile, Speed Grapher, and Paranoia Agent for slightly darker stories.
Peter Griffin got most of the good ones down pat though, just use his list for reference.

I like animes like Full metal... good story, good action. Not alot of blood and gore (you know the ones im talking about... the ones where body parts fly) Trigun is my 2nd favorite, then Ghost in the Shell... kind of go from there ( i hate naruto)
