If your budget is ~$3000, why not go a step up and build one based around the Core i7s instead?

Plenty to choose from. Decide for yourself which set you want. If you want 12GB, buy a second set.
Have you considered the 4870 X2 instead of the GTX 295? What size monitor are you playing on? If its not a 30inch, you could save a few hundred and look at the 4870 or GTX 260.
Your other peripheral parts are fine though.
