hello mapping enthusiasts, i want to know when creating doors and window should i use the carve tool. iv been warned not to be some one but in a tutorial i saw on you tube they use it and does the job very well, my problem use carve or not to use carve and end up making millions of walls around each door/ window.

im new/ low level of knowledge with hammer so please be gentle not kill me for asking an amazingly noobish question :)

No. Bad Ice *smack*. Carve tool is an evil device. Every time you use it, god kills a kitten. And I know you love kittens. To create a doorway, you need to make more than one brush and align them in such a way that it creates an opening. This will likely mean 3 brushes minimum, depending on the shape of your doorway.

The carve tool is avoided for a few reasons. It takes the shape you carved and turns it into many tiny fractured shapes, wich is never really a good thing since you lose control over how these shapes are formed. Secondly, it is a frequent source of leaks, wich are a royal nightmare, as 1 leak a mere fraction of a unit big can destroy a map.

evil carve tool ??. big leak noooooo, my poor map is going down a worm hole ahhhh
that would explain why the doors only partly show thought the walls ahhh i see

Doors are generally 73 units high and 33 wide if i rember correctly but you can check out all the dimensions over on the valve dev wiki. It has all the sizes. There are a few models but lots of doors are just textures.
