I'd been lucky enough to find all the spy unlockables before they changed the system to accommodate both.
Didn't get any of the sniper one's though, so a friend and i hosted our own server and set about getting the sniper achievements done. I prefer to do it that way myself, but now they've altered the system a little i think it'll be a lot better by the time they've done the demo update (well, it's demo afaik)

You forgot the option, "from achievements but not in achievement servers."

The set of achievements they gave this time were very easy, got enough of them to unlock all weapons in 2 days.

i didn't have all the achievements done but i had enough to get both the huntsman and the ambassador. i unlocked the rest of the sniper ones by just owning with the huntsman and i haven't done the spy ones

I got the achievements without achievement servers and some lucky drops.

I had only one unlock by the time the milestones were brought back, teh dead ringer if you are interested. However I had gotten 18 achievements for sniper and 21 for spy before milestones and so when they returned i was granted 5 weapons and 5 milestone achievements in one go which was a bit of a shock lol. The crucial option you missed out was achievements from a non-achievement server, i had all my achievements from balckmesa and 2fort instant respawn Go me!
