New to TF2 so I'm not sure if any of these I've played elsewhere can work in TF2...
..but one type of game-type (across games) that I've always found enjoyable is one where every single person on the other team has to be killed once, but the kill only registers if it's their turn to be killed.
First 'A' has to be killed, and then 'B' must be killed, but during their role as "killee" everyone else dies as much as they want, no big deal.
The first team to complete all their kills in order wins.
There are different variations for play style. The main one being whether or not anyone knows who it is that needs to be killed or not. Not knowing can prevent people from just sitting around safely somewhere, but on the correctly designed map you're just in a big box anyway so it's not too much of an issue.
Then there's always the dodgeball game, where players are separated somehow and just launch rockets at each other. The correct action by one player (a kill streak, head shot, something like that) respawns all the players on his team.
