Well the reasons you could add these types of servers even when some of the servers don't get much traffic would be to attract the people who only play that game mode. Some people just can't play normal CSS and want to try different game modes and some people just stick to one specific type. I know I did. I was part of a WCS server for over 3 years and barely played any other game modes.

I would have the office and dust2 servers alternate between their original maps and their extended counterparts (e.g. de_dust2_extended or whatever)
