So you believe online games should be segregated by the platform you choose to play on?
I believe some platforms offer varying experiences, controls, support, and environment.

If my game was "how much FPS can you get", I do not think it would make sense to pair up a person playing on a PS2 with a person playing on a supercomputer.

If my game was "how well can you aim" and I was playing on a controller, I would not want to be paired up with someone with a mouse.

If my game was "how fast can you type", I would hope the platform would be one that has a keyboard.

Expecting games to be cross-platform requires the games to cater to all platforms rather than take advantage of uniqueness of a specific one.

Some holes in this.

For FPS- A PS5 or Xbox Series X is more powerful than a lot of PC gamer's computers... a lot of potatoes out there. Heck this point is invalid just on PC gaming itself when everyone has a different rig that can put out different FPS.
For how well can you aim or type - you can plug a mouse and keyboard into a console...
You can also use a console controller on a PC. So unless you are gaming on a wii there is really not much uniqueness going on.

After finding out that Stardew Valley doesn't support cross play across PC and Console, I now fully support the "Depends on the game" answer.
