I love bologna. I grew up on Ramen noodles and fried bologna sandwiches. One time when I was young, I spent the whole summer in Jackson Hole, Wyoming with my Grandma and Grandpa Nurple with my siblings and cousins. We had stuff like grits, biscuits and gravy, chicken noodle soup with the gizzards, and LOTS of fried bologna.

We also rode horses and made up plays to perform for G and G. One of them included my sister as thumbilina flying down from the loft. That one didn't go so well, but that a story for another day.

Anywho, I thought I'd share some of my favorite bologna recipes as remembered from watching Grandma Nurple. I was 12, so this is all kinda from memory. Enjoy! :)

Fried Bologna Sandwich

2 slices bologna
1 slice cheese
onions
pickles
mustard
2 slices white bread

Fry bologna until lightly browned. Toast bread. Spread mustard over one side of each slice of toasted bread. Layer one slice bologna, one slice cheese, onions, pickles, and second slice of bologna.

Bologna Cheese ball

1/4 lb. bologna
3 oz. cream cheese
4 oz. Roquefort cheese
small onion

Chop bologna and onion finely. Mix with cheeses and chill until firm. Roll in paprika and refrigerate.

Bologna Cake

1 1/2 lb. bologna
2 (8 oz.) pkg. cream cheese

Slice the bologna. Take 1 piece of bologna and cover with a layer of cream cheese, lay another piece of bologna on top of first piece. Then cover second piece with cream cheese, continue to do this until all the bologna is layered in the form of a cake. Then take remaining cream cheese and cover top and sides, just like you were icing a cake.

Ahh jackson hole, nice place.

Ummmmm bologna cake? seriously? stack bologna, cream cheese, more bologna, more cream cheese.... I think I might have to pass on that one, sounds a bit foul, no offense.

The rest sound yummy, and you have just made me hungry now, thanks a lot.

O M G that looks awesome. I am going to try that.

Question: Yellow mustard or spicy? Sweet pickle or Dill pickle?

Wow. I'm totally going to make a bologna cake this weekend. Just reading the recipe makes me hungry.

Hmmmm bologna cake??? Sounds like a quadruple bypass to me. :P

Yeah they sound good, but every time I go the the lake the kids are always trying to push me in the water. I might have to pass this time around. But thanks for the recipes. :D

i <3 bologna. everything about it is just... ahhhh

im going to have to try some of these recipies (if i spelt that right)

Bologna Cake!?!? thats just weird... it reminds me of a food a pregnant girl would want like peanut butter & pickles! Do you have a muffin in the oven  :p

I was a little disappointed to realize that I had misread your title. I was hoping your bologna's first name was Fred.

Both recipes sound excellent, however I was hoping to see a good bologna+peanut butter recipe. The "Bologna Cake" recipe sounds evil but delicious. I have to question the validity of the photo though. It looks like pitas stacked on top of eggs.

I'm going to have to think twice about ordering your recipe book.
