I love bologna. I grew up on Ramen noodles and fried bologna sandwiches. One time when I was young, I spent the whole summer in Jackson Hole, Wyoming with my Grandma and Grandpa Nurple with my siblings and cousins. We had stuff like grits, biscuits and gravy, chicken noodle soup with the gizzards, and LOTS of fried bologna.
We also rode horses and made up plays to perform for G and G. One of them included my sister as thumbilina flying down from the loft. That one didn't go so well, but that a story for another day.
Anywho, I thought I'd share some of my favorite bologna recipes as remembered from watching Grandma Nurple. I was 12, so this is all kinda from memory. Enjoy!
Fried Bologna Sandwich
2 slices bologna
1 slice cheese
onions
pickles
mustard
2 slices white bread
Fry bologna until lightly browned. Toast bread. Spread mustard over one side of each slice of toasted bread. Layer one slice bologna, one slice cheese, onions, pickles, and second slice of bologna.
Bologna Cheese ball
1/4 lb. bologna
3 oz. cream cheese
4 oz. Roquefort cheese
small onion
Chop bologna and onion finely. Mix with cheeses and chill until firm. Roll in paprika and refrigerate.
Bologna Cake
1 1/2 lb. bologna
2 (8 oz.) pkg. cream cheese
Slice the bologna. Take 1 piece of bologna and cover with a layer of cream cheese, lay another piece of bologna on top of first piece. Then cover second piece with cream cheese, continue to do this until all the bologna is layered in the form of a cake. Then take remaining cream cheese and cover top and sides, just like you were icing a cake.
